Baked Brie
Recipe from Rory, a long-time friend
When I was back home last week, I had a few girlfriends from my former job in NC over for a girl’s night, and I made my party go-to recipe – Baked Brie. This crowd pleaser only looks gourmet, so I highly recommend for upcoming holiday parties when you want to impress, but are short on time.
1 7.7oz Wheel Brie cheese (I prefer Ile de France)
2 8oz Packages Pillsbury Original Crescent Rolls
1 2.25oz Package Diamond chopped nuts (I like hazelnuts and walnuts)
1/3c Light brown sugar
1 6oz bag dried fruit (I like mixed berries and cranberries, but anything goes!)
1. Preheat oven to 350F.
2. Unroll half of one package crescent rolls on baking sheet lined with aluminum foil and place Brie on top.
3. Mix nuts, brown sugar and dried fruit in medium bowl.
4. Pour mixture on top and along sides of Brie.

5. Use remaining 1.5 packages crescent rolls to wrap Brie sides and top to create a dome. (Make sure to reserve dough of 1 crescent roll to patch any holes.)
6. Lightly coat top of dome with one beaten egg, using a pastry brush.

7. Bake 40 minutes, or until center is melted.
8. Enjoy!
 It’s not the healthiest to ever come out of our kitchen, but I think this splurge is definitely worth it and Gwyneth does too.

  1. Hi Meredith – I was wondering if this Brie recipe is something I can assemble ahead of time (like the day before/morning of the party) and then bake right before the guests arrive. Also, do you crust the crust off the Brie? Thanks for your help. ~nancie

  2. Hi Nancie! I have not assembled this ahead of time before, but my guess is that the crescent rolls could taste different if they were out of the can and in the fridge for too long. I bet if you mixed the brown sugar, berries, nuts, etc before hand they would do just fine in a Ziploc, though. Then you could just unroll dough, drop the Brie on top, pour your baggie on there and wrap it up. That could save you some time. I do not crust off the Brie, but I also don’t mind it at all (I don’t waste cheese!) I hope this helps!! Let me know how it goes!!
